Best Chana Masala Recipe | Hotel Style Chole Masala | Step-by-Step Guide


Chole Masala is one of the most loved North Indian curries—rich, spicy, tangy, and perfect with puri, bhatura, or rice. Yah recipe ghar me bilkul market-style taste degi.

 

Ingredients (For 3–4 Servings)

For Boiling Chana

  • 1 cup Kabuli Chana (Chickpeas)

  • 3–4 cups water

  • 1 tsp salt

  • 1 tea bag (optional – color ke liye)

For Gravy

  • 2 medium onions (finely chopped)

  • 2 medium tomatoes (puree)

  • 1 tbsp ginger-garlic paste

  • 2 green chilies (slit)

  • 1 bay leaf

  • 1 tsp cumin seeds

  • 2 tbsp oil or ghee

Spices

  • 1 tsp turmeric

  • 1.5 tsp red chilli powder

  • 1 tsp coriander powder

  • 1 tsp roasted cumin powder

  • 1.5 tsp Chole Masala / Garam Masala

  • ½ tsp amchur powder

  • Salt to taste

For Garnish

  • Coriander leaves

  • Lemon slice

How to Make Chole Masala

Step 1: Boil the Chana

  1. Chana ko overnight soak karen (6–8 hours).

  2. Pressure cooker me chana + salt + tea bag + water add karein.

  3. 5–6 whistles tak boil karein until soft.

Step 2: Prepare the Gravy

  1. Kadhai me oil garam karein.

  2. Cumin + bay leaf add karen.

  3. Onion add karke golden brown hone tak bhunein.

  4. Ginger-garlic paste add karen aur 1 minute bhunein.

  5. Tomato puree + namak + masale (turmeric, chilli, coriander) add karen.

  6. Oil separate hone tak bhunein.

Step 3: Mix Chana with Gravy

  1. Boiled chana + thoda chana water add karein.

  2. 10–12 minutes medium flame par cook karein.

  3. Garam masala + amchur powder dal kar mix karein.

  4. 5 minutes simmer karein for restaurant-style thickness.

Step 4: Serve

Fresh coriander se garnish karein and serve with bhatura, puri, naan, ya jeera rice.

  • Thoda sa chana ko mash karke gravy thick banayi ja sakti hai.
