A. Dosa Batter

Ingredients

  • 3 cups idli rice

  • 1 cup urad dal

  • ½ cup poha

  • 1 tsp methi seeds

  • Salt

Instructions

  1. Soak rice + poha together for 4–5 hours.

  2. Soak urad dal + methi separately for 4 hours.

  3. Grind urad dal fluffy; grind rice smooth; mix, add salt, ferment overnight.

B. Potato Masala Filling

Ingredients

  • 3 boiled potatoes (crushed)

  • 1 onion (sliced)

  • 2 green chilies

  • Curry leaves

  • ½ tsp mustard seeds

  • ½ tsp turmeric

  • 1 tbsp chana dal

  • 1 tbsp urad dal

  • Salt

Instructions

  1. Heat oil → add mustard, dals, curry leaves → sauté onions.

  2. Add turmeric, chilies, potatoes, salt → mix and cook 3 min.

C. Making Masala Dosa

 Heat tawa, pour batter, spread thin.Drizzle oil/ghee.Place a scoop of potato masala in the center.Fold & serve hot with chutney and sambar.
